STRAWBERRY ICE CREAM PARFAIT PIE
	Ken's mom collected many great recipes over the years and especially desserts. This wonderful summer taste treat comes from her old friend Helen Barnes, God rest her soul. 1 Package of Lemon Jell-O 1 1/4 Cup Boiling Water (you can use the juice from the berries instead) 1 Pint Strawberry Ice Cream 1 1/2 Cups Slice Fresh Strawberries, drained and sweetened slightly 1 Pie Shell Dissolve the Jell-O in hot water or berry juice. Add the Strawberry Ice Cream by spoonfuls, stirring until blended. Allow to chill until it starts to set but not firm, about 1/2 hour. Stir in the drained Strawberries. Put it in a Pie Shell and chill. This is a really great summer dessert that we often had as kids. These are recipes that have appeared in our news letter or on our web site.
